Key Lime Bars

Key lime bar cookies

So, how was Mother’s Day? Mine was extremely quiet and uneventful which sounds boring but was really nice! My oldest son called and we ended up chatting for over two hours. That usually does not happen but I guess we were both rather lonely for each other. He comes home the end of this month. Did I mention he comes home the end of this month? Not that I am excited. I always want to bake lots of things for him and feed him well but he is very much into grilled chicken breast/fresh green beans from the garden, gee thanks mom, I don’t want dessert. :/ He is busy creating muscles on his muscles. Happy Mother’s Day:Random Thoughts

tea table

You know, it is amazing. I have eight kids and because of that people tend to seek me out for parenting advice.  It is flattering, but humbling too; I worry that I will steer them in the wrong direction, or that I will sound proud and full of myself.

My kids are the kids that you see playing with their sibs because they want to.  They are the kids that run out to the car to carry in the groceries without being asked.  They are the kids that visit elderly neighbors weekly, bake the neighbors cookies, and offer to help fix fences.  One is about to be home for the first time in two years.  A few weeks here and then three years in Japan.  He has just re-enlisted in the Air Force.  I have a son that is planning on moving to Africa to do missions.  He is 16 this year, and soon that will be a reality for him..and for Marc and I.  My kids often get complimented when we are out on their  behavior.  Marc and I often are told how lucky we are to have so many children that are so well behaved.  We know.  But it didn’t come without a price.  There was consistent discipline involved.  Umm…there IS consistent discipline involved.

Saturday Blogsurfing

Lemon Doughnuts…Yummy!

And another week is gone! As I said on Kettle and Cup this morning, life has eben hectic and I haven’t visited as many blogs as I would like. By the way there are a ton of coupon codes for coffee over there today. :)

I have realized something.  You know there are millions of food blogs but really there are only maybe a thousand that are posted on regularly.  If you notice that you see the same names on the blogsurfing saturday it is because I have gotten frustrated hitting blog oafter blog where the last post is older than my youngest child.

Help me out. If you come across something that you think would work for saturdays..email me the webage. :) Read More

Crumb Cakes are a Recipe for Old Fashioned Goodness

crumbcake

Crumbcake. A muffin but not. :)

Usually when you see a recipe for crumbcake it will be baked in a square pan. I like to make them in muffin cups; little individual bites of WOW. By doing it this way you can Read More

Mexican Wedding Cookies

Mexican Wedding Cakes

Mexican Wedding Cakes are not cakes at all. They are somewhat like a short bread cookie but not. And sometimes they are called Mexican Wedding Cookies.

Are you confused?

They are a delicate cookie that has a delicate, yet definitely there flavor..vanilla, butter…nuts…

But where did Mexican Wedding Cakes come from? Read More

Savory Romano & Herbed Monkey Bread

monkey bread

There are many kinds of monkey bread, bubble loaf, or pull-apart bread as it is often called. Most of them start with canned biscuit dough and are a sweet treat for breakfast.

This is a little different in that the recipe starts with homemade roll dough and then is dipped in melted butter and rolled in a mixture of mixed spagetti herbs (from Frontier), Romano cheese, and onion powder. The result is a delicious savory pull apart bread that stands in for garlic bread at any meal.

This makes a very large bread. You may be able to get two smaller loaves from it by using a ring mold rather than a bundt pan. Feel free to experiment with the herbs..I have rolled it in mesquite seasoning, in cinnamon and sugar, in garlic butter, green onion and cheddar, and in chipotle. The basic dough is a quick and tender dinner roll on its own without making it into monkey bread. Read More

Pineapple Upside Down Cake: A Classic Recipe

 pineapple upside down cake

I don’t know too many people who don’t like pineapple upside down cake.  The thick, caramel syrup combined with juicy pineapple and paired with tender sponge cake is nearly irresistible.

So, last night, when trying to come up with a quick dessert to round out a spicy Thai meal Upside Down Cake was pretty much a no-brainer.  Which is good because my life has been hectic and chaotic lately.  And that, my friends, doesn’t begin to explain it. Read More

Baking Powder:Single Acting? Double Acting? What is the difference?

baking powder

There are two types of baking powder.

The basic difference between the single acting and the double acting is the time it takes them to react. Either ultimately work as well as the other.

How to Make Homemade, Gluten Free Baking Powder

rose vanilla sconesrootbeerfloat cake3

reeses cookies

I don’t know if you are freaky about baking powder or not. I am because I don’t like the aluminum factor. Some people are allergic to gluten, though, and need to make sure they have a gluten free baking powder. Now, Rumford’s is very good, and it is gluten free and aluminum free, but it can be expensive, comparatively.

Whether you are on a gluten-free diet, or just want to make your own baking powder this video is awesome, and the baking powder is excellent.

This post will go over onto the substitutions page so if you need it in the future you can find it easily!

If you don;t catch what she says on the video the basic recipe is:

Gluten Free Homemade Baking Powder

Cream of tartar:2 parts

Baking Soda:1 part

Cornstarch:1 part

Be careful, making your own baking powder can be addictive..Pretty soon you find yourself making your own cleaners, and soap, and….

Behind the Vines…

wine

Over the month of May the b5 bloggers will be introdicing our readers to four other b5 blogs. There are some amazing blogs here, I haven’t even read them all so I am lookng forward to reading new blogs as well.

This week check out Farley, at Behind the Vines. In fact it is a definite go-with to Baking Delights, because once in awhile you might want to drink something besides milk with your cookies.

Lots of information on the new wines she is trying, her old favorites, and just an amazing wealth of expertise as it pertains to wine.

I sent a asked these bloggers what their favorite recipe was..but you know..bloggers, well, we tend to not write if we don;t have to…so as threatened, I am assigning a recipe to Farley, in honor of her review of 2006 Coral Mustang Tempranillo Rose’  .

From the way she described the wine I think this might be something she would like…
